Colby From Colby Is The Best Colby
It was a dreary day when I went to Colby, but it is the birthplace of Colby cheese, so it deserves some props. Colby is always best when it is Longhorn style (in my opinion). The town, a quant little village in the middle of the state, was cozy and pleasant, with reminders here and there that this is where Colby began as a cheese. Culver’s sells it on some of their burgers too. Yum for Colby cheese.
